Starters
1.Celeriac and perl-las cheese soup with crème fraiche, grated nutmeg and sorrel.
2.Fanned avocado pear with a prawn, red pepper and lemon salsa.
3.Parisienne of melon with orange and grapefruit segments, stem ginger and sugared mint leaves.
4.Rustic game pate wrapped in bacon with brandy, crisp salad and a pear and sultana compote.
 
Main Course
1.Escalope of venison with a blueberry and port sauce and fresh sage.
2.Roast Pembrokeshire turkey with chestnut seasoning, chipolata sausages and a rich gravy.
3.Canon of lamb in a filo pastry parcel with a mint trivet and béarnaise sauce.
4.Fillet of turbot with wild mushroom, fennel and crab sabayon.
5.Butternut squash, walnut, cranberry and red onion en croute with harlech gratin.
All served with a selection of seasonal vegetables
 
Desserts
1.Tiramisu mocha gateau.
2.Christmas pudding, rum sauce and brandy butter.
3.White and dark chocolate mousse terrine with amaretti biscuits and a raspberry coulis.
4.Lemon and lime citrus tart with maple toasted almonds.
 
Fresh filter coffee.
Homemade mince pies and after dinner mints.

Wednesday Sailing

The Wednesday evening sailing/training & Barbecue
have been particularly successful this year.

Many thanks to all the many helpers.

A number of juniors have gained Stages 1, 2, 3 and 4 of the junior RYA scheme.
(with help from PWS and a fine subsidy from the Welsh Assembly)



Regional Squad Training and Open Training

This continues this winter at Pembrokeshire Watersports.
